Quick and Easy Coconut Dreams

Coconut Dreams      1/2 lb coconut  (4 ounces or 4 Tablespoons) 1 cup sugar 1 egg Combine coconut & sugar with egg.  Roll into tight balls and cook on a greased tray Mod oven for 20 mins.   When cold they look good with 1/2 a cherry on top with a little icing or some lemon zest or chopped up jubes look good  too These look good if you sort of  "clump"  into a egg shape

Caramel Cookies - Quick, Easy Biscuit Recipe

Caramel Cookies - No photo for this. They disappear as soon as they come out of the oven ! Crumbs are all that is ever left - quick to make if you want something fast. No metrics again - very old favourite recipe.  Quick way to convert  1 Tablespoon equals 1 ounce - that doesn't mean a huge, gigantic heaped up tablespoon ! Ingredients:   4 oz Butter (or margarine if you must !)       4 oz sugar 1 Tablespoon golden syrup 1 Tablespoon milk 1 teaspoon vanilla 8 ozs Self raising Flour How to:  Put butter, sugar, golden syrup, milk and vanilla into a saucepan Boil gently for five minutes.  Cool Add Flour  Roll into balls Flatten with a fork  Bake - moderate oven  275 degrees C   10 12 minutes       

Easy Date Slice With Lemon or Lime Icing

Date Slice with Lemon Icing   Very more-ish and quickly whipped up 11 teaspoons butter   2 teaspoons honey  1/3 cup rolled oats, or gluten free rolled oats 1/4 cup wholemeal flour 1/2 teaspoon baking powder 7 teaspoons raw sugar 1/2 cup chopped dates   Icing  3/4 cup icing sugar 1/4 teaspoon lemon or lime zest  1 Tablespoon lemon or lime juice 1 - 2 teaspoons butter melted  hot water to mix to correct consistency  Preheat over to 180 degrees C  Melt butter and honey Mix dry ingredients Add dates Add melted butter to dry ingredients  Mix well  Press into greased baking tin or slice pan Bake 15 minutes Ice when cool and cut into squares or bars 

Dutch Shortbread

      So quick and easy to do you will make these again and again - as you can see this recipe has been in the family so long it isn't even in metrics.  Dutch Shortbread 4 ozs butter 3 oz sugar   6 oz flour  1 teaspoon baking powder 1/2 teaspoon salt  1 Weetbix  crumbled up or you can use crushed cornflakes or any crunchy cereal   Method Melt butter Add to dry ingredients Place teaspoon lots on cold baking sheet or press into a shortbread pan Bake in slow oven - I put it in around 140 Degrees - depending on your oven. That's it !  Easy isn't it ?

Cranberry and Coconut Muesli Slice ready for the oven Ingredients 1/4 Cup plain flour 1/2 tsp ground cinnamon 3 cups rolled oats 1/2 cup shredded coconut 1/2 cup pumpkin seed kernels 1 cup dried cranberries 180grams butter 1/2 cup honey 1/2 cup honey 1/2 cup brown sugar 1 tsp vanilla extract Preheat oven 10 160 degrees Place flour, cinnamon, oats, coconut, pumpkin seed kernels and cranberries in bowl Mix to combine. Place the butter, honey, sugar and vanilla in a pan over low heat and stir until melted Add to flour and mix well. Press into lightly greased 20 cm X 30 cm tin lined with non stick baking paper. Bake 35 - 40 min until golden Cool in tin Serves 8 - 10 My husband like this so much he ate half the tray and our guests kept tucking in until only crumbs were left. This is a relatively new recipe but I have made this quite a few times already and have substituted other dried fruits depending on what was in the pantry and always delicious. Simple and easy to make Anzac Biscuits Today I had the urge to make something to nibble with our cuppa and for afters and discovered this really, really easy Biscuit recipe on the back of a Rolled Oats packet and thought it was too good to keep to myself. They are crisp, nutty and full of flavor and just the thing for a quick healthy snack. Anzac Biscuits Ingredients 1 cup uncooked Rolled Oats 1 cup plain flour 1 cup lightly packet brown sugar 3/4 cup desiccated coconut 125g butter or margarine 2 Tablespoons golden syrup 1 teaspoon of baking soda 2 Tablespoons boiling water Method: Blend oats, flour, sugar and coconut. Melt butter/margarine and syrup over low heat and remove Dissolve baking soda in boiling water, then add to melted butter mixture Stir into oats mixture Drop full spoonfuls of mixture onto a greased tray - make sure you leave room to spread Bake at 150 degrees C (300 degrees F) Conventional oven 15 - 17 minutes - leave longer if you want them crisp These biscuits u...
