How To Make Anzac Biscuits



Simple and easy to make Anzac Biscuits

Today I had the urge to make something to nibble with our cuppa and for afters and discovered this really, really easy Biscuit recipe on the back of a Rolled Oats packet and thought it was too good to keep to myself. They are crisp, nutty and full of flavor and just the thing for a quick healthy snack.

Anzac Biscuits
Ingredients
1 cup uncooked Rolled Oats
1 cup plain flour
1 cup lightly packet brown sugar
3/4 cup desiccated coconut
125g butter or margarine
2 Tablespoons golden syrup
1 teaspoon of baking soda
2 Tablespoons boiling water

  • Method:
  • Blend oats, flour, sugar and coconut.
  • Melt butter/margarine and syrup over low heat and remove
  • Dissolve baking soda in boiling water, then add to melted butter mixture
  • Stir into oats mixture
  • Drop full spoonfuls of mixture onto a greased tray - make sure you leave room to spread
  • Bake at 150 degrees C (300 degrees F)
Conventional oven 15 - 17 minutes - leave longer if you want them crisp

These biscuits used to be a family favorite in most households in New Zealand and the name was associated with the Australian and New Zealand Army Corps who fought together and the name of ANZAC was given to these biscuits.

Warning ! These are very more-ish and once you start it is easy to consume the entire batch !

Chocolate Fridge Slice - superbly delicious and decadent slice - try instead of Christmas pudding. 30 grams almonds chopped up roughly 30 grams pumpkin seeds 150 grams of dried fruit like raisins, apricots, berries 50 mls of brandy or fruit juice 180 grams of dark organic chocolate (Trade Aid chokkie is fabulous if you can manage to save it before you demolish the entire block ) 50 grams of unsalted butter ( or substitute) 75 grams of broken up digestive biscuits Add fruits and brandy in bowl to absorb brandy. Line a cake tin with cling film and let this overhang. Melt choc/butter over low heat. Drain dried fruit and tip into bowl and add pumpkin seeds, chocolate mix and stir well. Pour into dish and put in fridge overnite. Serve in slices as is or with sour cream or yogurt.
